Co-fermented Cider / Wine Lees Cider
Dabinett and dessert apple Cider fermented with Bacchus wine yeast lees and lees aged for 9 months.
Pours a bright pale gold with delicate petillance / spritz observable in the glass.
Nose – beautiful complex, perfumed aromatics with elderflower & hay giving way to a gentle hazelnut, lemon and apricot aromas.
Palate - initially lemon zest and crisp apple, but develops bready notes with a gentle creamy fizz. A clean yet lingering finish with a hint of dried apricot.
Food pairing – mild creamy curries; Moroccan tagine dishes; chicken salads and rich shellfish dishes. Roasted root vegetables, particularly butternut squash.
